Sweet Puff Pastry Canepes with Plum, Marzipan and Pistachio

Absolutely something special you can make the “filling” ahead of time and make these right when you need them. They are so simple and easy you’ll make al your own canapes in the future!

Makes 16 medium sized canepes

Ingredients

One packet of ready to roll puff pastry
180g marzipan
3 tbsp of crème fraiche
1 tsp orange blossom water
~6 tbsp of plum jam
25g dark chocolate chopped into chips (I used Domori)
5 plums
25g pistachio nuts – roughly chopped

Preheat the oven to 200c/190 fan
Line a baking try with parchment paper
Remove the stone from the plums and cut them into slices
Lay the chilled puff pastry out. Try to keep it on the plastic sheet that it is rolled up in.
Next you’ll need to cut 16 squares from the puff pastry and place them on the baking tray
Now pop the marzipan, orange blossom water and crème fraiche into your parents’ food processor (if you’re me) or add to a bowl and mix until a smooth paste is formed
We need to split the jam now between the 16 squares. Spread a layer of the plum jam on each square.  Be careful to leave a roughly 2 cm boarder around the edge for puff and tidiness.
On top of the jam, carefully spread a layer of the marzipan paste we made on top of the jam
Top this blend of goo with a sprinkle of chocolate chips
Cover with a couple of the plum slices we made earlier on each
Optional – sprinkle some chopped pistachio on top
Place in the oven and cook for 20 mins
Allow to cool slightly as the jam will scald and stick to delicate skin

    This is a great idea but what ewlse can you put on this? I don’t like plum so what can I use instead?
